It’s a Party!

This past weekend was the first round of NFL playoffs.   Seeing as I am a native Coloradan, it’s only reasonable that I would be a Denver Bronco fan.  Unless you live under a rock, I’m pretty sure you have at least heard the name “Tebow” bandied about in conversations at work, on Facebook, in grocery stores and even in church!

Tim Tebow is the quarterback for the Denver Broncos and led his team to the NFL playoffs this weekend.  Tim is a very passionate Christian, and talks about God and his faith all the time.  During games, he could be seen bending down on one, thanking God for his successes.  This bending on knee has become known as “Tebowing”.  Tebowing fever hit my workplace on Friday, as one of my co-workers let it be known that he was willing to pay $5 to anyone that would get a picture taken of them “tebowing” and put it as their Facebook Profile picture.  This is “Tebowing”….

In our excitement at the Denver Broncos going to the playoffs and our love for Tim Tebow, we decided to have a party to watch the playoffs.  I made a staggering amount of food and only 7 people showed up–including my 3 kids!   Well, the food was fabulous, the guests were fun and the playoffs?!?!?  Several words come to mind—disappointing, massacre, slaughter–to name a few.  At least the food was fabulous!

I decided to make Oven Chili Dogs, Hot Artichoke Spinach Dip, Potato Slabs and Uber Rice Krispy Treats.  Did I mention the food was fabulous?!?!?  For those of you that are considering hosting a Superbowl Party, I highly recommend this menu, so I am going to share the links to the recipes with you!

Oven Chili Dogs

I found the Oven Chili dog recipe on this site.  This is a picture of my Oven Chili Dogs.  I didn’t put on the relish because I just don’t like relish, but I did put both the mayo and mustard, and both were delicious!  These were even better two days later!

Hot Artichoke Spinach dipThis Hot Artichoke Spinach Dip was the most amazing artichoke dip I’ve ever had!  I could eat this by the spoonful (and actually did at one point yesterday!  Lol…)  I doubled the recipe because I didn’t think the regular recipe was going to make enough.  One recipe would have been plenty, but I’m glad I doubled it because I am still enjoying this fabulous dip!  I served it with cut celery, carrots, Ritz Crackers and a small loaf of French bread, cut into small slices.  It was the best with the bread, but the crackers were pretty good too (as well as the aforementioned spoon!)  Make this dip only if you want to impress your friends!

Uber Rice Krispy TreatsThese are to die for!!  I can make a big pan of these and they don’t last a day in my house!  They are easy to make and your family will love you forever if you make them!  I have discovered that these also go by the name Scotcheroos, but I like calling them “Uber” because it truly describes them!  (Or it’s my German heritage, dying to use a word from the German dialect!)  To make these, you will need:

1 Cup of Sugar
1 Cup of Karo Syrup (the clear kind)
1 Cup of Peanut Butter
6 cups of Rice Krispies (measure into a large, buttered bowl before melting the sugar and Karo)
6 oz of Chocolate Chips
6 oz of Butterscotch Chips

First you need to melt the sugar and Karo in a saucepan over medium-low heat, stirring constantly.  Once the sugar is no longer grainy, remove the pan from the heat and stir in the peanut butter.  Continue mixing until the peanut butter is totally melted in the karo-sugar mix.   Now, pour the sugar-Karo-pb mixture over the rice krispies.  Immediately begin to stir and mix them all together.  Once it is all mixed together, dump into a 9×13 pan and spread evenly.  I line the pan with aluminum foil for ease in serving later!  The easiest way I’ve found to spread the mixture evenly, is to butter your hands and just press it into the pan.  Once it’s in the pan, begin to melt the choco and butterscotch chips in the microwave.  You don’t want to burn it, so I do it about 35 second, stir, 35 more seconds, stir, repeat until it’s all melted.  Now, pour this over the top of the mixture in the pan and spread evenly.  Now, you must wait for the chocolate-butterscotch to set before you dive in!  When it has all set, remove the whole block from the pan with the foil and place on a cutting board.  Pull the foil off the sides, and cut into bars.  I dare you to eat just one!!
